A dish that looks so hard to make, but is actually fairly simple. You will need 2 sheets of puff pastry, 2 filet Mignon (about an inch thick), 1 egg, 4 tablespoons of mushroom duxelles, a tablespoon of unsalted butter and seasoning of your choice for the steaks. Thaw your puff pastries according to the directions on the package. Season the filets according to your taste. Melt the butter in a non stick skillet over medium heat. You want to cook the filets on both sides for about 3-5 minutes until they are browned, and brown the edges as well. Check the temp as the middle of the filets should not exceed 120 degrees. Wrap the filets in plastic and chill them for at least 2 hours. Whisk together 1 egg and 1 tablespoon of water to create an egg wash. Place about 3 teaspoons of mushroom duxelles on top of the puff pastry, on top of that place a filet and wrap it up. Brush it with the egg wash and bake in the oven at 400 degrees for about 30 minutes.
