How do You Cook Rhubarb?

I have several rhubarb plants in my garden and love to make rhubarb pie and jelly. Rhubarb needs to be picked when it is ripe because if it over ripens it becomes woody (stringy). The way I make rhubarb pie is to cut the rhubarb into one inch cubes. In a mixing bowl, combine one cup sugar and two teaspoons of lemon juice, stir in the rhubarb and let this sit for five minutes. Take a pie crust and line your pie plate. Stir in one and a half tablespoons of cornstarch in the sugar mixture. Pour into the pie plate and bake at 350 degrees 50 minutes or until thickened. You can also put a top crust on if you choose. Serve after letting the pie sit for 15 minutes. You can find more information here:
