My favorite way to cook a pork tenderlion in a cast iron dutch oven. Place the pork tenderlion in the dutch oven, cover 2/3 of the lion with water. I add a vegetable boullion cube and cook for about 2 hours. After three hours I add a package of baby cut carrots and 6-8 baking potatoes and return to the oven for up to 1 1/2 hours. The potatoes and carrots can be removed before serving. I use the potatoes for homemade mash potatoes and the carrots absorb the great meaty flavor.
