My favorite way to cook it is to rub it down with lots of garlic salt and pepper. Place bone side down, fat side up in the pan. Put it in an oven at 500 degrees for 1 hour. Turn off the oven and have the meat sit in the hot oven for 2 hours. Do not open the oven. After 2 hours, turn the oven on to 350 and continue to bake for about 45 minutes. Make sure you allow the meat to set for 10 to 15 minutes before carving.
