How do You Age Beef?

It takes about 7 days to ‘age’ beef. So, when an animal is slaughtered, while waiting to be cut up into pieces,( known as cuts or cutlets), it’s in the aging process. At least that’s what the meat man told me. The tenderness and the flavor of the meat develops during the aging process, and another thing to know with regard to the aging process, is that shelf life of the meat decrease in fresh meat.
